Recipe of the Week
Pesto Protein Pasta Salad
-1 pack of cooked protein pasta
-1 rotisserie chicken finely chopped
-1 head of steamed broccoli finely chopped
-1 box of arugula
-1/2 cup of shaved Parmesan
-1/3 cup of toasted pine nuts
Dressing
-3 generous spoonfuls of cottage cheese
-2 spoonfuls of pesto
-2 tbsp of olive oil
-1 tbsp of balsamic vinegar
-juice from 1 lemon
-1 tsp of garlic powder
-1 tsp of onion powder
-salt and pepper to taste
Cook pasta al dente. Steam broccoli and finely chopped once cooled. Toast pine nuts over stove until fragrant. Combine all salad ingredients after cooked and cooled.
Blend dressing ingredients in a food processor or blender until smooth. Add water to thin as needed.
Pour blend over pasta salad and mix until coated evenly. Place in the fridge to chill for 1 hour. Serve cold.
