Fully diving into the things that I am most passionate about including health and wellness along with a splash of CPG and cooking and anything else on my mind that might be worthwhile putting out into the world. Milk Mania
It seems as though the heyday of alternative milks has come and gone and we are ushering in a new era for milk. Raw milk and A2 milk have both seen a huge resurgence in popularity this past year. Raw milk is just milk that has not been pasteurized. It has gained traction among niche health-conscious groups due to its purported retention of natural enzymes, probiotics, and nutrients that are often diminished during pasteurization. Similarly, A2 milk, which contains only the A2 beta-casein protein (as opposed to the A1 protein found in conventional milk), has been marketed as easier to digest and less likely to cause discomfort for individuals with mild lactose intolerance or dairy sensitivity.
Both trends have sparked debate within the scientific and regulatory communities over safety and efficacy, given historical issues with foodborne illness in the category. In fact raw milk is only legal for sale in 39 of 50 states and is often restricted to on-farm sales or specific types of dairy products such as cheese. With the broader consumer movement toward clean-label, minimally processed, and functional foods has fueled their growth, particularly in premium and specialty markets, raw and A2 milks have gained traction among the health and wellness community.

Recipe of the Week
Arugula Couscous Summer Salad
1 cup of dry couscous
1 large package of arugula
1 chopped red onion
2 chopped bell peppers (red and orange)
1 box of crumbled feta
½ cup of slivered almonds
½ cup of dried cranberries
Dressing
2 lemons juiced
½ cup of olive oil
¼ cup of red wine vinegar
2 tbsp of balsamic vinegar
2 tbsp of honey
½ tsp of garlic powder
Salt and pepper to taste
Cook couscous according to box instructions. While couscous is cooking, prepare dressing whisking to combine ingredients. Chop veggies and feta. Combine all solid ingredients in a large bowl including cooled couscous and pour dressing over and stir so salad is evenly coated. Serve as a side or add a chopped protein to use as a main dish. Enjoy!
